The Hotel Golf Château of Chailly is delighted to announce the arrival of a new Chef.
2022, change of Chef at the head of the kitchens.
After the departure of the former Chef de Cuisine, at the end of 2021, the objective was to find a Chef with the desire to give a new dynamic to the restaurant, by privileging local products and Burgundian gastronomy.
Alexandre Clochet, a Burgundian chef, proud of his native Burgundy region.
Originally from Burgundy, Alexandre Clochet began working in the restaurant business with the Loiseau Group under the direction of Patrick Bertron. He then decided to leave the region for the Bordeaux region where he worked in Saint-Emilion with Ronan Kervarrec at the Table de Pavie (2 Michelin stars). He then assisted his long-time friend and colleague Romain Lorenzon at the Pressoir d’Argent – Gordon Ramsay, 2* Michelin in Bordeaux. In the kitchen, he highlights local products, while respecting their seasonality, but also the producers. Each product has its place on the plate: he likes to work with noble products such as truffles, but highlighting less noble products is one of his challenges. In each case, everything is sublimated on the plate to create a gastronomic dish.
“My goal in the kitchen is to work with regional products and to highlight the producers.
I like to revisit the great classics of Burgundian cuisine, to create a gastronomic dish. One of the signature dishes on the restaurant’s current menu is “pochouse”, a typical Burgundian dish based on freshwater fish.
Being a native of the region, the products and the soil are a nice source of inspiration for me.
Some of the dishes are based on my childhood memories!

Sublimating the products means offering customers a gastronomic experience, from the amuse-bouche to the mignardises. Through the meticulous choice of ingredients and cooking techniques, the aim is to offer customers a convivial and qualitative moment in an exceptional domain, and why not a star at the end.
